For the entire month of August, the inn offers a seasonal menu that features cuisine rich in intense and full-bodied flavors with ingredients from the Madonie area.

Rustic appetizer from the Locanda: local cured meats and cheeses, olives, dried tomatoes, caramelized onion, mixed fritturine
Cardoncello mushroom breaded and fried in green sauce
White caponatina with apples and hazelnuts, chilli pepper threads and basil dressing

Ravioli alla norma: burrata filling on aubergine cream, roasted tomato sauce and flakes of salted ricotta
Busiate of fresh pasta with mixed mushrooms with parsley dressing
Fresh pasta garganelli with black pork ragù and asparagus cream

Pork cheek cooked at low temperature and its reduction on saffron potato cream
